Why cant they make a proper zombie game?

Why cant game developers make a proper zombie game?

The last proper zombie game was resident evil 3.

Then they moved to black crazy people with machetes, left 4 dead 2 was stupid as hell, dead rising is ridiculous.

I want a next gen zombie game where the zombies are slow, and its in a free roam style like GTA, where you can hide out in houses and barricade windows, where you can use anything as a weopon (within realism) such as knives and forks, a game where finding firearms is really hard, like a proper survival game where you rescue people but even if they get bitten once they die.

Game developers out there if your reading this, this is what gamers want, not some idiot running around with two chainsaws and unlimited amount of rpg ammo

Personally I think that Left 4 Dead was pure genious. Left 4 Dead 2 is okay I guess.
To answer your question, I guess it's because no one has ever seen a Zombie before and therefore have no clue how one would act/behave......
There's actually a few really good mods on Steam for the HL2 Engine(not the HL2 game), it's called Zombie Panic! Source and it is free. Providing you have a game that uses the HL2 engine.
